Hummus Deviled Potatoes

Ingredients

  • 6 mini russet potatoes boiled
  • 1 1/2 cups of soaked chickpeas
  • 1 clove of garlic
  • 1 tbs sesame oil
  • 1 tbs hemp seeds
  • 1 tbs tahini
  • 2 tbs of fresh squeezed lemon juice
  • 1/4 cup and 2 tbs of filtered water
  • 1/2 tsp of pink himalayan salt
  • Sprinkle of cumin
  • Grape tomatoes
  • Kalamata olives
  • Sprouts

Preparation

  1. Slice potatoes in halves and use a spoon to gently scoop out filling.

  2. Combine remaining ingredients excluding tomatoes, olives, and sprouts into a blender or food processor. Blend until smooth.

  3. Fill in potatoes with hummus. Top with tomatoes, olives, and sprouts.

  4. Garnish with lemon zest and fresh cracked black pepper and enjoy.
