Chargrilled Aubergine with Teriyaki Tempeh and Rice

Ingredients

  • aubergine
  • oil
  • coconut aminos
  • tempeh
  • onion
  • baby tomatoes
  • teriyaki sauce
  • sesame seeds
  • spring onion
  • brown rice
  • pak choi

Preparation

  1. Coat aubergine wedges in a little oil and coconut aminos, then grill on high heat until tender.

  2. Sauté tempeh cubes with onion, baby tomatoes, and teriyaki sauce.

  3. Top the dish with sesame seeds and spring onion.

  4. Cook brown rice according to package instructions.
