Easy Vegan Chickpea Curry

Ingredients

  • 1 tablespoon olive oil
  • 1 onion
  • 2 garlic cloves
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon curry powder
  • 1 can (14 oz) coconut milk
  • 1 can (14 oz) diced tomatoes
  • 2 cans (14 oz each) chickpeas
  • 1 cup vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Preparation

  1. Heat the olive oil in a large pot over medium heat.

  2. Add the onion and garlic, and sauté until softened.

  3. Stir in the cumin, coriander, and curry powder, cooking for about 1 minute.

  4. Add the coconut milk, diced tomatoes, chickpeas, and vegetable broth.

  5. Bring to a simmer and cook for 15-20 minutes until flavors meld.

  6. Season with salt and pepper to taste.

  7. Garnish with fresh cilantro before serving.
