Easy Vegan Chickpea Curry
Ingredients
- 1 tablespoon olive oil
- 1 onion
- 2 garlic cloves
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon curry powder
- 1 can (14 oz) coconut milk
- 1 can (14 oz) diced tomatoes
- 2 cans (14 oz each) chickpeas
- 1 cup vegetable broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Preparation
Heat the olive oil in a large pot over medium heat.
Add the onion and garlic, and sauté until softened.
Stir in the cumin, coriander, and curry powder, cooking for about 1 minute.
Add the coconut milk, diced tomatoes, chickpeas, and vegetable broth.
Bring to a simmer and cook for 15-20 minutes until flavors meld.
Season with salt and pepper to taste.
Garnish with fresh cilantro before serving.
