Hearty Chickpea Ratatouille for Meal Prep

Ingredients

  • 1/2 onion
  • 3 cloves garlic
  • 1 zucchini
  • 1 red bell pepper
  • 1/2 cup basil
  • 1/2 cup parsley
  • 1 tsp salt
  • 1 tsp oregano
  • pinch red pepper flakes
  • pepper to taste
  • 1 tbsp nutritional yeast
  • 1 tsp maple syrup
  • 1 can crushed tomatoes or tomato sauce
  • 1 can chickpeas

Preparation

  1. Heat oil in a pan over medium heat and add onion; cook for 5 minutes.

  2. Add garlic, zucchini, and pepper to the pan; cook for 5 more minutes. Then add all remaining ingredients except chickpeas, cover, and simmer for 10 minutes.

  3. Finally, add chickpeas and simmer for 5 more minutes.
