Hearty Chickpea Ratatouille for Meal Prep
Ingredients
- 1/2 onion
- 3 cloves garlic
- 1 zucchini
- 1 red bell pepper
- 1/2 cup basil
- 1/2 cup parsley
- 1 tsp salt
- 1 tsp oregano
- pinch red pepper flakes
- pepper to taste
- 1 tbsp nutritional yeast
- 1 tsp maple syrup
- 1 can crushed tomatoes or tomato sauce
- 1 can chickpeas
Preparation
Heat oil in a pan over medium heat and add onion; cook for 5 minutes.
Add garlic, zucchini, and pepper to the pan; cook for 5 more minutes. Then add all remaining ingredients except chickpeas, cover, and simmer for 10 minutes.
Finally, add chickpeas and simmer for 5 more minutes.
