High Protein Quinoa Veggie Salad
Ingredients
- 1 cup of quinoa (cooked or sprouted)
- 1 bunch of parsley
- 12-18 heirloom mini tomatoes
- 3 Persian cucumbers
- 1/2 cup of walnuts
- 3 lemons
- salt and pepper to taste
- Pinch of turmeric
Preparation
Finely chop the parsley.
Finely chop the Persian cucumbers.
Crush the walnuts.
Juice the lemons.
Mix all ingredients together with salt, pepper, and turmeric to taste.
Enjoy the salad.
