Homemade Great Northern Bean Milk Alternative

Ingredients

  • 1 cup dry white northern beans
  • 1/4 tsp sea salt
  • 2 Tbsp maple syrup
  • 1/2 tsp vanilla (optional)

Preparation

  1. Soak beans in filtered water overnight.

  2. The next day, rinse, and refill with new water for 24 hours or until beans are soft enough to bite into them.

  3. Rinse beans again, and add 1 cup filtered water and beans in a blender.

  4. Puree while slowly adding remaining water until smooth, adding more water if necessary.

  5. Strain milk and pulp through a nut milk bag or cheesecloth a few times, pressing beans to remove milk.

  6. Add sea salt, and sweetener of choice to taste (and vanilla if using) and blend.

  7. Chill and store in refrigerator. Will last 2-4 days.

  8. Note: It has a strong, robust taste if not sweetened; add more sweetener if needed.
