Lemon Strawberry Cheesecake Nice Cream

Ingredients

  • 1 1/2 cup cashews, soaked
  • 1 can coconut cream
  • 1/4 cup rice syrup
  • 1/4 cup lemon juice
  • 1 tbsp lemon zest
  • 1 very ripe banana
  • 1 tsp vanilla extract
  • Top Layer
  • 1 1/2 cups fresh strawberries
  • 1 tbsp rice syrup

Preparation

  1. More fresh berries and nuts for decorating

  2. Take a square pan and line with parchment paper

  3. In a food processor blend cashews, coconut cream, rice syrup, lemon juice, lemon zest, banana and vanilla until completely smooth

  4. Pour the mixture into your pan

  5. Place your strawberries and maple syrup in a food processor and blend

  6. Spoon the mixture into the pan on top of the first layer

  7. Place in the freezer for several hours or overnight until firm

  8. When ready to serve, remove from pan, decorate with fresh berries and nuts, cut into squares, serve and enjoy
