No Bake Fiber and Energy Bars

Ingredients

  • 1 cup organic unsweetened unsulfured dried apples (or dried fruit of choice)
  • 1 cup raw walnuts (unsalted)
  • 1 cup pitted dates
  • 1 teaspoon CEYLON cinnamon

Preparation

  1. In a food processor, combine dates, apples, and walnuts and blend until fine crumbs form, about 1 minute.

  2. Add cinnamon and continue blending until the mixture is very soft and holds together when pinched, about 3 to 4 minutes.

  3. Press the mixture into a 4 x 8-inch parchment-lined pan and cover, then chill for at least 2 hours or until firm.

  4. Cut into bars, which should make about 12, and you can wrap them individually and keep refrigerated for up to 5 days or freeze for up to 1 month.
