Roasted Pumpkin and Sweet Potato Soup
Ingredients
- Roasted Sugar Pie Pumpkin
- Sweet Potato
- Celery
- Carrots
- Onion
- Garlic
- 1/2 Green Apple
- Veg Broth
- Cinnamon, Nutmeg, Cayenne, Salt & Pepper
Preparation
Preheat oven to 200°C and roast the pumpkin and sweet potato until tender.
In a large pot, sauté chopped celery, carrots, onion, and garlic until softened.
Add the roasted vegetables, diced green apple, vegetable broth, cinnamon, nutmeg, cayenne, salt, and pepper.
Simmer for 20-30 minutes to blend flavors.
Blend the mixture until smooth using a blender or immersion blender.
Serve topped with hickory smoked salt pumpkin seeds.
