Roasted Pumpkin and Sweet Potato Soup

Ingredients

  • Roasted Sugar Pie Pumpkin
  • Sweet Potato
  • Celery
  • Carrots
  • Onion
  • Garlic
  • 1/2 Green Apple
  • Veg Broth
  • Cinnamon, Nutmeg, Cayenne, Salt & Pepper

Preparation

  1. Preheat oven to 200°C and roast the pumpkin and sweet potato until tender.

  2. In a large pot, sauté chopped celery, carrots, onion, and garlic until softened.

  3. Add the roasted vegetables, diced green apple, vegetable broth, cinnamon, nutmeg, cayenne, salt, and pepper.

  4. Simmer for 20-30 minutes to blend flavors.

  5. Blend the mixture until smooth using a blender or immersion blender.

  6. Serve topped with hickory smoked salt pumpkin seeds.
