Saag Chole Inspired Chickpea Curry
Ingredients
- 3 chopped garlic cloves
- 2 tablespoons chopped fresh ginger
- 1 teaspoon chopped fresh turmeric (optional)
- 1/2 yellow onion, diced
- 1 teaspoon extra virgin olive oil
- 1 can organic chickpeas
- 4 cups finely chopped greens (such as power greens or baby spinach)
- 1 cup plant milk
- 2 teaspoons tomato paste
- 1 tablespoon turmeric powder
- 1 teaspoon garam masala
- 1/2 teaspoon ground cumin
- Pinch of crushed red pepper
- Sea salt, to taste
- Ground black pepper, to taste
- 2 tablespoons plain plant yogurt
Preparation
Sauté on medium heat 3 chopped garlic cloves, 2 tablespoons chopped fresh ginger, 1 teaspoon chopped fresh turmeric (optional), and 1/2 diced yellow onion in 1 teaspoon extra virgin olive oil until onions are browning.
Add 1 can of organic chickpeas and 4 cups of finely chopped greens of choice. Cook for 2 minutes until all greens have wilted.
Add 1 cup plant milk and 2 teaspoons tomato paste and bring to a boil.
Add 1 tablespoon turmeric powder, 1 teaspoon garam masala, 1/2 teaspoon ground cumin, a pinch of crushed red pepper, sea salt, and ground black pepper.
Let simmer for 5 minutes and stir well to incorporate all spices. Then turn off heat and add 2 tablespoons plain plant yogurt and stir well.
Serving suggestions
Serve with jasmine rice and roasted baby bell peppers.
