Simple Jackfruit Curry with Mushrooms

Ingredients

  • 1 medium onion
  • 2 cloves garlic
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp garam masala
  • 1.5 cups mushrooms
  • 1 can jackfruit
  • 1/2 can coconut milk
  • 1/2 can tinned tomatoes
  • 1 tbsp vegan curry paste or curry powder
  • salt and pepper to taste

Preparation

  1. Add the onion, garlic, smoked paprika, cumin and garam masala to a non-stick saucepan with a splash of water and sauté for 2-3 minutes, until softened and fragrant.

  2. Add the mushrooms and sauté for around 3 minutes more, until they begin to cook down.

  3. Pull apart the jackfruit pieces using your hands or a fork.

  4. Transfer the jackfruit to the saucepan and add the coconut milk, tomatoes, and curry paste.

  5. Simmer over a medium heat for 8-10 minutes, until thick and creamy.

  6. Season to taste with salt and black pepper before serving.
