Tofu Curry with Spinach and Green Beans
Ingredients
- 1 tbsp olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- 2 tsp garam masala
- 1 tsp cumin
- 1 tsp paprika
- 1 cup green beans, trimmed
- 10 oz tofu, crumbled
- 1 can coconut milk
- 1 1/2 tbsp curry paste
- 1/2 tsp garlic powder
- 2 tbsp tamari
- Juice of 1 lemon
- 2 cups spinach
Preparation
Heat the olive oil in a large pan and add the onion, garlic, tomato paste, garam masala, cumin and paprika. Cook for 5 minutes, until softened and fragrant.
Add the green beans and tofu, cooking for 3-4 minutes more.
Now add the coconut milk, curry paste, garlic powder and tamari. Simmer over a medium heat for 10 minutes, stirring frequently.
At the last minute, stir in the lemon juice and the spinach, serving when the spinach wilts.
