Tofu Curry with Spinach and Green Beans

Ingredients

  • 1 tbsp olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 tsp garam masala
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 cup green beans, trimmed
  • 10 oz tofu, crumbled
  • 1 can coconut milk
  • 1 1/2 tbsp curry paste
  • 1/2 tsp garlic powder
  • 2 tbsp tamari
  • Juice of 1 lemon
  • 2 cups spinach

Preparation

  1. Heat the olive oil in a large pan and add the onion, garlic, tomato paste, garam masala, cumin and paprika. Cook for 5 minutes, until softened and fragrant.

  2. Add the green beans and tofu, cooking for 3-4 minutes more.

  3. Now add the coconut milk, curry paste, garlic powder and tamari. Simmer over a medium heat for 10 minutes, stirring frequently.

  4. At the last minute, stir in the lemon juice and the spinach, serving when the spinach wilts.
