Vegan Spiced Lentil Stew

Ingredients

  • 1 onion
  • 2 cloves of garlic
  • 3 potatoes
  • 2 carrots
  • 2 dl red lentils
  • 400 ml coconut milk (1 can)
  • 400 ml water
  • 1 cube of veggie stock
  • 1 tbsp tomato paste
  • 1 tbsp garam masala
  • 1 tbsp curry powder
  • 1 tsp paprika powder

Seasonings

  • Salt and pepper to taste

Preparation

  1. Chop onion, garlic, potatoes and carrots into tiny pieces.

  2. Add them to a pan or pot with some oil and fry for a few minutes.

  3. Add the lentils and the spices and fry for 2 more minutes.

  4. Add the remaining ingredients and liquids, lower the heat, and simmer for around 40 minutes or until potatoes and lentils are soft.

  5. Stir occasionally to prevent burning.

  6. Serve with rice and enjoy.
