Amazing Wild Berry Chia Pudding

Ingredients

  • 1 cup mixed berries (blueberries, strawberries, blackberries)
  • 1 cup raw coconut water
  • chia seeds
  • 1 tsp Maqui powder

Optional sweeteners

  • coconut nectar
  • raw blue agave syrup
  • whole date syrup

Garnish

  • sliced figs
  • strawberries
  • whole blueberries

Preparation

  1. Blend 1 cup mixed berries (blueberries, strawberries, blackberries) in 1 cup raw coconut water until smooth.

  2. Soak chia seeds in the blended berry-coconut mixture along with 1 tsp Maqui powder for 30 minutes to 2 hours, stirring occasionally. Note: The longer it soaks, the thicker the pudding becomes.

  3. For a sweeter taste, add coconut nectar, raw blue agave syrup, or whole date syrup to the mixture and stir well.

  4. Garnish the pudding with sliced figs, strawberries, and whole blueberries before serving.
