Baby Bok Choy in Garlic Sauce

Ingredients

  • 6 baby bok choy
  • 4 green onions, sliced diagonally into 2-inch pieces
  • 6 cloves garlic, minced
  • 1 small knob ginger, grated (about 1.5 tsp)
  • 1.5 tbsp sesame oil
  • 1 tbsp soy sauce
  • 0.5 cup water
  • Cornstarch slurry (1 tbsp cornstarch mixed with 1 tbsp water)
  • Salt and pepper to taste

Preparation

  1. Cut the baby bok choy in half or into quarters if larger, and rinse under running water to remove sand or dirt.

  2. Blanch the bok choy in boiling salted water for 30 seconds and set aside.

  3. Sauté the garlic and ginger in sesame oil on medium heat until fragrant, about 2-3 minutes, then add the soy sauce.

  4. Add the bok choy to the garlic and ginger mixture and cook for a minute or two before adding the green onions.

  5. Raise the heat slightly, add the water, let everything cook for a couple of minutes while stirring, then add the cornstarch slurry. Be careful not to overcook the bok choy to keep some crunch.

  6. Season with salt and pepper, mix well until the sauce thickens, and serve immediately.
