Baked Miso Glazed Eggplant
Ingredients
- 2 tablespoons mirin
- 1 tablespoon sake
- 2 tablespoons shiro miso
- 1 tablespoon sugar
- 2 Japanese eggplants
- 1/2 teaspoon sesame oil
- toasted sesame seeds, for garnish
Preparation
Cut eggplants lengthwise and score
Mix all the sauce ingredients
Brush the cut sides of the eggplants with the sauce and cook for 20 minutes at 180°C (or about 10 minutes for smaller eggplants)
Garnish with sesame seeds and serve with boiled rice
