Cauliflower Rice & Egg Curry
Ingredients
- Cauliflower rice
- 1- wash a cauliflower
- 2- roughly chop
- 3- stick into a food processor
- 4- heat some butter in a pan (or oil)
- 5- stir in the cauliflower rice for 1-2mins
- 6- add coriander or any herb of your preference to add flavour
- 7- sprinkle some salt (optional)
Preparation
For the curry
Heat some rapeseed oil in a wok or large pan whilst putting 5-6 eggs to boil
Add 1tspn of cumin to the oil
Add 1 tspn of Black mustard seeds (rai seeds)
Add 5-6 cloves
Add 6-7 curry leaves
Add 3-4 cinnamon sticks (approx 1 inch)
Add 6-8 fenugreek seeds
Once the seeds start crackling on medium heat, add chopped onions and garlic. ?To save time, I always have chopped onions and garlic in the fridge/freezer- fry them in the seeded rapeseed oil or your preferred oil for 3mins or until brown on high flame
Add chopped green chillies
Add chopped ginger
Stir fry for 1 min
Add 1 tspn turmeric
Add 1 tspn red chilli powder
Add 1 tspn ground coriander & cumin powder
Add 2 tspn of garam masala
Stir
Add 1 ? chopped tomatoes
Add single cream to taste (I added about 140ml)
Add the boiled eggs cut in halves and mix everything in
Add coriander and serve with coriander and green chilly garnish
