Cauliflower Rice & Egg Curry

Ingredients

  • Cauliflower rice
  • 1- wash a cauliflower
  • 2- roughly chop
  • 3- stick into a food processor
  • 4- heat some butter in a pan (or oil)
  • 5- stir in the cauliflower rice for 1-2mins
  • 6- add coriander or any herb of your preference to add flavour
  • 7- sprinkle some salt (optional)

Preparation

  1. For the curry

  2. Heat some rapeseed oil in a wok or large pan whilst putting 5-6 eggs to boil

  3. Add 1tspn of cumin to the oil

  4. Add 1 tspn of Black mustard seeds (rai seeds)

  5. Add 5-6 cloves

  6. Add 6-7 curry leaves

  7. Add 3-4 cinnamon sticks (approx 1 inch)

  8. Add 6-8 fenugreek seeds

  9. Once the seeds start crackling on medium heat, add chopped onions and garlic. ?To save time, I always have chopped onions and garlic in the fridge/freezer- fry them in the seeded rapeseed oil or your preferred oil for 3mins or until brown on high flame

  10. Add chopped green chillies

  11. Add chopped ginger

  12. Stir fry for 1 min

  13. Add 1 tspn turmeric

  14. Add 1 tspn red chilli powder

  15. Add 1 tspn ground coriander & cumin powder

  16. Add 2 tspn of garam masala

  17. Stir

  18. Add 1 ? chopped tomatoes

  19. Add single cream to taste (I added about 140ml)

  20. Add the boiled eggs cut in halves and mix everything in

  21. Add coriander and serve with coriander and green chilly garnish
