Chickpea Katsu Style Curry
Ingredients
- 1 large onion
- 1 large carrot
- 2 cups veggie stock
- 2 tsp Garam masala
- 1 tbs mild curry powder
- 2 tins chickpeas
- Oil
- 1 tsp corn flour
Preparation
Cook the carrot, onion, and spices in a little oil.
Add the veggie stock and cook until vegetables are tender, then blend or mash the mixture.
Allow the sauce to thicken on low heat; add 1 teaspoon of corn flour if desired for a thicker consistency.
Rinse the chickpeas and add them to the sauce.
If preferred, bake the chickpeas in the oven for 15-20 minutes for crunchiness before adding to the sauce.
