Chickpea Katsu Style Curry

Ingredients

  • 1 large onion
  • 1 large carrot
  • 2 cups veggie stock
  • 2 tsp Garam masala
  • 1 tbs mild curry powder
  • 2 tins chickpeas
  • Oil
  • 1 tsp corn flour

Preparation

  1. Cook the carrot, onion, and spices in a little oil.

  2. Add the veggie stock and cook until vegetables are tender, then blend or mash the mixture.

  3. Allow the sauce to thicken on low heat; add 1 teaspoon of corn flour if desired for a thicker consistency.

  4. Rinse the chickpeas and add them to the sauce.

  5. If preferred, bake the chickpeas in the oven for 15-20 minutes for crunchiness before adding to the sauce.
