Coconut Ice with Beetroot Layer

Ingredients

  • 2 cups shredded coconut for Layer 1
  • 2 tablespoons coconut oil for Layer 1
  • 1 tablespoon coconut milk for Layer 1
  • 1 teaspoon coconut nectar for Layer 1
  • 2 teaspoons beetroot powder for Layer 2

Preparation

  1. Blend the Layer 1 ingredients until slightly sticky.

  2. For Layer 2, use the same ingredients as Layer 1 but add 2 teaspoons of beetroot powder, then blend until slightly sticky.

  3. If you do not have a high-quality blender, you may need to add more coconut oil or a sweet syrup such as rice malt syrup or coconut nectar to achieve the right consistency.
