Coconut Ice with Beetroot Layer
Ingredients
- 2 cups shredded coconut for Layer 1
- 2 tablespoons coconut oil for Layer 1
- 1 tablespoon coconut milk for Layer 1
- 1 teaspoon coconut nectar for Layer 1
- 2 teaspoons beetroot powder for Layer 2
Preparation
Blend the Layer 1 ingredients until slightly sticky.
For Layer 2, use the same ingredients as Layer 1 but add 2 teaspoons of beetroot powder, then blend until slightly sticky.
If you do not have a high-quality blender, you may need to add more coconut oil or a sweet syrup such as rice malt syrup or coconut nectar to achieve the right consistency.
