Double Chocolate Cookies

Ingredients

  • • 1/2 cup coconut sugar
  • • 2 tbsp maple syrup
  • • 1/2 cup unsweetened, plain vegan yogurt (runny, such as @foragerproject ) • 2 tbsp melted coconut oil
  • • 1 tsp vanilla
  • • 1 flax egg (1 tbsp flax seed meal + 2 tbsp water)
  • • 2 tbsp almond milk
  • • 1 1/2 cup coconut flour
  • • 1/3 cup cocoa powder
  • • 1 tsp baking soda
  • • 1/3 cup dark chocolate chunks (omit to be completely refined sugar-free or swap for alternately sweetened choc)

Preparation

  1. Preheat the oven to 350 degrees. line a baking sheet with a silicone baking mat or parchment paper. in a large bowl, whisk together all wet ingredients (through flax egg). add in flour, cocoa powder, and baking soda. stir until a soft dough forms. fold in chocolate chunks

  2. Using a cookie scoop, scoop dough on to the baking sheet. slightly press down with the palm of your hand. (optional): stick a chocolate chunk in the middle. bake for 15 min. let cool for 5 min. before digging in
