Easy Cheesy Lentil Quesadillas

Ingredients

  • 1 cup brown lentils
  • 1 15 oz can diced tomatoes
  • 1/4 cup diced adobo chili peppers
  • 2 tsp chili powder
  • 1 tsp cumin
  • smoked paprika
  • garlic powder
  • sprinkle of salt and pepper
  • 1 1/4 cups water
  • 1/4 cup quinoa
  • shredded cheese (regular or dairy-free)
  • tortilla shells

Optional toppings

  • avocado
  • jalapeños

Preparation

  1. Add lentils, adobo chili peppers, canned tomatoes, spices and water to a medium sized pot

  2. Bring to a boil and let simmer for 10 minutes covered

  3. Stir in quinoa and continue cooking for another 10 minutes until it reaches a thick consistency

  4. Shred cheese and prep your toppings

  5. Assemble quesadillas with cheese and lentil filling, fold and pan fry for 3 minutes per side

  6. Serve with avocados, salsa and other desired toppings

Notes

  1. The lentil filling can also be used for tacos, taco salads, and other dishes

  2. It is a perfect pantry staple made with common ingredients
