Easy Cheesy Lentil Quesadillas
Ingredients
- 1 cup brown lentils
- 1 15 oz can diced tomatoes
- 1/4 cup diced adobo chili peppers
- 2 tsp chili powder
- 1 tsp cumin
- smoked paprika
- garlic powder
- sprinkle of salt and pepper
- 1 1/4 cups water
- 1/4 cup quinoa
- shredded cheese (regular or dairy-free)
- tortilla shells
Optional toppings
- avocado
- jalapeños
Preparation
Add lentils, adobo chili peppers, canned tomatoes, spices and water to a medium sized pot
Bring to a boil and let simmer for 10 minutes covered
Stir in quinoa and continue cooking for another 10 minutes until it reaches a thick consistency
Shred cheese and prep your toppings
Assemble quesadillas with cheese and lentil filling, fold and pan fry for 3 minutes per side
Serve with avocados, salsa and other desired toppings

The lentil filling can also be used for tacos, taco salads, and other dishes
