Jackfruit Seed and Drumstick Curry
Ingredients
- 1 tablespoon coconut oil
- 1/2 teaspoon mustard seeds
- 2 dried red chillies
- as needed curry leaves
- 2 cups jackfruit seeds (sliced lengthwise)
- 1/2 cup shallots
- as required water
- 1 cup grated coconut
- 4 cloves garlic
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon chilli powder
- 2 cups drumsticks (cut into pieces)
- as required salt
Preparation
Heat a pan and pour in the oil.
Add mustard seeds and let them splutter.
Then add the dried red chillies and curry leaves and sauté.
Add the shallots and sauté until translucent.
Add the jackfruit seeds, mix well, and pour in enough water. Cover and cook until the seeds are soft.
Meanwhile, prepare the ground coconut mixture. In a mixer jar, add grated coconut, garlic, cumin seeds, turmeric powder, and chilli powder. Grind into a coarse paste.
Once the jackfruit seeds are cooked, add the drumstick pieces, mix well, add salt and some water, cover, and cook for about 5 minutes.
Once the drumsticks are cooked, add the ground coconut mixture, stir well to combine, add a little more water if needed, and cook for a few more minutes.
