Mango Coconut Noodle Curry
Ingredients
- 1 ripe mango
- 1 medium sweet potato
- 1 red bell pepper
- 1 small leek
- 1 garlic clove
- 1 can coconut milk
- 1 1/2 cups water
- 1 cup fresh spinach
- 1 cup frozen corn
- Ramen noodles
- 1 Tbsp neutral oil
- Fresh cilantro
Curry spice mix
- 2 tsp. ground coriander
- 1 tsp. turmeric
- 1 tsp. cumin
- 1/2 tsp. cayenne pepper
- 1 tsp. salt
- 1 small piece of ginger
Preparation
Heat oil in a Dutch oven, add the curry mix. Stir frequently for a minute then add leeks and garlic. Stir again for a minute. Add water to deglaze the Dutch oven. Add bell pepper and sweet potato cubes and cook for 5 minutes.
Add coconut milk, water and mango cubes. Cover and simmer for 20 minutes.
Add ramen, corn and spinach the last 3-4 minutes of the cooking.
Transfer to bowl and garnish with fresh chopped cilantro.
