Mixed Berry Nice Cream Chia Parfait

Ingredients

  • 4 frozen bananas
  • 1 cup frozen mango
  • 1 tablespoon pink pitaya powder
  • 1/3 cup frozen blueberries
  • 1/2 tablespoon berrylicious blend
  • 1.5 tablespoons chia seeds
  • 1/2 cup soy milk or any plant milk
  • 1 tablespoon maple syrup
  • 1 teaspoon pink pitaya powder
  • 1/4 teaspoon berrylicious blend

Preparation

  1. Blend the frozen bananas, frozen mango, and pitaya powder until thick and smooth.

  2. Remove half from the blender and place into a separate bowl and into the freezer.

  3. Add the blueberry and berrylicious blend powder into the blender along with the remaining pink nice cream and blend until smooth.

  4. Place the purple nice cream in a separate bowl and into the freezer.

  5. Combine the chia seeds, plant milk, and maple syrup and whisk until uniformly combined. Place in fridge until thickened.

  6. Take chia pudding out when thickened, divide into two parts in separate bowls and add pitaya powder to one part and berrylicious blend to the other and mix until well combined.

  7. Layer the parfait. It works best with chia pudding at the bottom and nice cream on top. Add toppings as desired, such as coconut cashew granola.
