Pasta Bake with Broccoli⁣

Ingredients

  • 1 box @tolerantfoods chickpea rotini⁣
  • 1 (24oz) jar tomato basil sauce⁣
  • 1/3 cup grated parmesan cheese⁣
  • 2 cups broccoli florets⁣
  • 1 cup shredded mozzarella cheese⁣

Preparation

  1. Preheat your oven to 400 degrees

  2. Combine all of the ingredients but the mozzarella in a lidded 10” pan (or use foil if you don’t have a lid) and stir together to combine well

  3. If all of the pasta isn’t mostly covered, add 1/4 cup of vegetable broth

  4. Sprinkle with mozzarella cheese

  5. Cover the pan with a lid (or foil) and bake for 40 minutes

  6. Enjoy! ⁣
