Red Pepper Guacamole Cups with Chickpeas and Avocado
Ingredients
- 1 red bell pepper
- chickpeas, cooked or sprouted
- 1 ripe avocado
- 1 medium tomato
- 1/2 red onion or green onions
- 1 clove garlic
- juice of 1 lemon or lime
- sea salt and pepper to taste
- handful of fresh cilantro (optional)
Preparation
Mash all ingredients except the red bell pepper and chickpeas.
Mix the chickpeas into the guacamole.
Scoop the mixture into the red bell pepper cups.
