Simple Tomato Pasta with Roasted Tomatoes

Ingredients

  • 1 small white onion
  • 3 garlic cloves
  • 1 tin of chopped tomatoes or passata
  • A generous handful of fresh basil leaves
  • 1 tablespoon of olive oil
  • A generous pinch of salt and pepper
  • Your favourite pasta

Slow roasted tomatoes

  • 250 grams cherry tomatoes
  • Olive oil for drizzling
  • Salt and pepper to taste

Preparation

  1. Slice the tomatoes in halves.

  2. Place them on a baking tray with the flesh facing upwards.

  3. Drizzle with olive oil and sprinkle with salt and pepper.

  4. Place the tray in the oven and slow roast the tomatoes at 150 degrees Celsius for 35-40 minutes.

  5. Add the oil to a large pan.

  6. Once hot, add in the chopped onion.

  7. Let the onion sauté for about 5 minutes until it starts to caramelize.

  8. Add in the crushed garlic and keep cooking for another minute.

  9. Add in the chopped tomatoes and mix everything together.

  10. Turn the heat down to a simmer, cover with a lid, and let the sauce cook for 20-25 minutes.

  11. Add in the chopped basil and cook for another minute.

  12. While the sauce is cooking, cook your favourite pasta according to the packet instructions.

  13. Drain the pasta and add it to the pan with the tomato sauce.

  14. Sprinkle with fresh basil leaves and top with the slow roasted cherry tomatoes.
