Simple Veggie Lasagne with Spinach and Peppers

Ingredients

  • 1 large onion, thinly sliced
  • 2 cloves garlic
  • 1 tbsp olive oil
  • 500g spinach
  • 4 red peppers
  • 4 cups tomato sauce or passata
  • Lasagne sheets
  • Cheese for the top

Béchamel

  • 3 tbsp butter
  • 3 tbsp plain flour
  • 1 1/2 cups semi skimmed milk
  • salt & pepper

Preparation

  1. Preheat the oven to 180C

  2. Cut the pepper into big pieces, coat with a little olive oil and bake for 20 minutes

  3. While the peppers are cooking, put the olive oil and onion into a large pan over a medium heat. Cook the onion for about ten minutes till just caramelised. Add the garlic and cook for another two minutes.

  4. Add the spinach to the onion, bit by bit till it’s all wilted. Season well.

  5. When the peppers and spinach are cooked, get all your layer ingredients ready.

  6. Make the béchamel - Put the butter and flour into a pan over a medium heat. Whisk together for a few minutes. Gradually add the milk and continue to whisk till smooth. This takes about five minutes. Season.

  7. Layer the ingredients as follows: Spinach, Lasagne sheets, Sauce, Lasagne sheets, Peppers, Lasagne sheets, Spinach, Lasagne sheets, Sauce, Lasagne sheets, Béchamel, Grated cheese.

  8. Bake for 40 to 45 mins till the top is golden brown

  9. Let it cool down a little, serve and enjoy!
