Smoky Chickpeas and Orange Thyme Orzo Bowl

Ingredients

  • Mustard greens
  • Beet greens
  • Shredded brussels sprouts
  • Avocado
  • Red onion
  • Mint
  • Rainbow microgreens
  • Everything bagel seasoning

Orzo components

  • 1 cup orzo (dry)
  • 1/2 cup orange juice
  • 2 tbsp olive oil
  • 1 tbsp orange zest
  • 1 tbsp agave or maple syrup
  • 1 small garlic clove, minced
  • 1 tsp fresh thyme leaves
  • 1/2 tsp sea salt

Chickpea components

  • 1 can chickpeas or 1.5 cups drained chickpeas
  • 1 tbsp avocado oil
  • 1.5 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp sea salt
  • 0.5 tsp liquid smoke
  • 0.5 tsp chipotle powder (optional)

Preparation

  1. Cook the orzo according to package instructions.

  2. In a bowl, combine orange juice, olive oil, orange zest, agave or maple syrup, minced garlic, fresh thyme leaves, and sea salt; whisk until well combined.

  3. Add 3-4 tablespoons of the sauce to the cooked orzo and mix well; set aside the remaining sauce.

  4. Heat 1 tablespoon of avocado oil in a pan over medium heat.

  5. Add the drained chickpeas and cook for 5 minutes, stirring occasionally to crisp evenly.

  6. Add smoked paprika, garlic powder, onion powder, sea salt, liquid smoke, and chipotle powder if using; cook for 1 more minute, stirring to distribute the seasonings.

  7. Remove from heat.

  8. Assemble the bowl by starting with a base of mustard greens, beet greens, and shredded brussels sprouts.

  9. Top with the prepared orange thyme orzo, crispy smoky chickpeas, sliced avocado sprinkled with everything bagel seasoning, red onion, mint, and rainbow microgreens.

  10. Serve with the remaining sauce on the side.
