Spinach Ravioli with Cashew Truffle Filling
Ingredients
Dough
- 250 g fresh spinach
- 250 g all purpose flour
- a splash of water
Filling
- 150 g cashew nuts
- 50 g macadamia nuts
- 2 tbsp nutritional yeast
- 1/2 tsp salt
- 4 tbsp truffle oil
Preparation
Make the dough by mixing spinach, flour, and water until a smooth dough forms
Prepare the filling by blending or mixing cashew nuts, macadamia nuts, nutritional yeast, salt, and truffle oil into a paste
Roll out the dough, cut into ravioli shapes, fill with the mixture, and seal the edges
Cook the ravioli in boiling water until they float and are tender, about 3-5 minutes
