Spinach Ravioli with Cashew Truffle Filling

Ingredients

Dough

  • 250 g fresh spinach
  • 250 g all purpose flour
  • a splash of water

Filling

  • 150 g cashew nuts
  • 50 g macadamia nuts
  • 2 tbsp nutritional yeast
  • 1/2 tsp salt
  • 4 tbsp truffle oil

Preparation

  1. Make the dough by mixing spinach, flour, and water until a smooth dough forms

  2. Prepare the filling by blending or mixing cashew nuts, macadamia nuts, nutritional yeast, salt, and truffle oil into a paste

  3. Roll out the dough, cut into ravioli shapes, fill with the mixture, and seal the edges

  4. Cook the ravioli in boiling water until they float and are tender, about 3-5 minutes
