Sundried Tomato Pasta

Ingredients

  • 250g pasta of choice (@sanremopasta)
  • 115g sundried tomatoes (oil-free), chopped (@sandhurstfinefoodsau)
  • 4 garlic cloves, finely chopped
  • 1/2 tsp fennel seeds
  • 1 tblsp tomato paste
  • 1 tsp dried oregano
  • 1/2 tsp chilli flakes
  • 1/8 tsp apple cider vinegar (@melrosehealth)
  • salt + pepper, to taste

Preparation

  1. Cook pasta according to packet directions. Drain and reserve 1 cup of pasta water. Rinse pasta, and set aside

  2. In the meantime, cook the garlic, oregano, chilli flakes and fennel seeds on a low heat until fragrant. Add in the sundried tomatoes, and continue cooking for a further 3 - 5 minutes

  3. Add the tomato paste, ACV, and half a cup of the reserved pasta water to the pan. Bring to a boil, then reduce to simmer, combining everything well

  4. When the pan is simmering gently, add the pasta and stir until coated. If need be, add some more of the reserved water. Season with salt + pepper, and serve, sprinkled with your fave dairy free parmesan (@greenvie_dairyfree)
