The King of All Veggie Burgers
Ingredients
- 2 cans black beans, drained, rinsed and mashed
- 1/2 onion, finely chopped
- 1/2 cup quinoa, cooked
- 1 large handful of mushrooms, finely chopped
- 1/4 cup walnuts, finely chopped
- 1/4 cup canned or cooked beets, finely chopped
- 1 flax egg (1 tbsp ground flax seed + 1 tbsp water, let sit for 5 mins)
- 2-3 tbsp flour of choice or 1/4 cup quinoa flakes
- 2 tbsp bbq sauce of choice
- 1/2 tsp garlic powder
- a pinch of salt and pepper
Preparation
Mix all ingredients together in a large bowl adding a bit more flour if you are finding the mixture to be too sticky
A little sticky is fine
Scoop 1/3 cup of mixture at a time, place on a parchment lined baking sheet
Using your hands, shape mixture into burgers
Bake in preheated oven at 425 degrees f for about 30 mins or until firm
Top with your favourite burger toppings
If you have a food processor, pulse the walnuts, add and pulse the beans, onion, mushroom and beets to save some prep time
