The King of All Veggie Burgers

Ingredients

  • 2 cans black beans, drained, rinsed and mashed
  • 1/2 onion, finely chopped
  • 1/2 cup quinoa, cooked
  • 1 large handful of mushrooms, finely chopped
  • 1/4 cup walnuts, finely chopped
  • 1/4 cup canned or cooked beets, finely chopped
  • 1 flax egg (1 tbsp ground flax seed + 1 tbsp water, let sit for 5 mins)
  • 2-3 tbsp flour of choice or  1/4 cup quinoa flakes
  • 2 tbsp bbq sauce of choice
  • 1/2 tsp garlic powder
  • a pinch of salt and pepper

Preparation

  1. Mix all ingredients together in a large bowl adding a bit more flour if you are finding the mixture to be too sticky

  2. A little sticky is fine

  3. Scoop 1/3 cup of mixture at a time, place on a parchment lined baking sheet

  4. Using your hands, shape mixture into burgers

  5. Bake in preheated oven at 425 degrees f for about 30 mins or until firm

  6. Top with your favourite burger toppings

  7. If you have a food processor, pulse the walnuts, add and pulse the beans, onion, mushroom and beets to save some prep time
