Ingredients

  • 1/2 cup of pumpkin purée
  • 1/4 cup of coconut cream (off the top of a can of full fat)
  • 2 tsp of smooth almond or cashew butter
  • 1/2 scoop of vanilla protein (if omitting
  • you may want to add a natural sweetener in here)
  • 2 tsp of pumpkin spice mix OR 1.5 tsp of ground cinnamon
  • 1/4 tsp of ground cinnamon
  • a generous grating of nutmeg and a tiny pinch of ground cloves. + the smallest pinch of pink salt

Preparation

  1. Blitz everything up in a food processor, pop in a ramekin and allow to set in the fridge for an hour ? If you’re body is okay with a little bit of sweetness, try adding in a date or a touch of pure maple syrup

  2. I find adding a touch of @vivolife sweetens my puds up enough as they use a touch of stevia - which you can easily add instead to prevent blood sugar from spiking
