Vegan Meatless Balls with Beans and Veggies

Ingredients

  • 2 tins kidney beans, drained
  • 1 beetroot
  • 1 carrot
  • 1 large onion
  • 1/4 cup sweetcorn
  • 50g Violife pizza cheese
  • 2 tsp smoked paprika
  • 1/2 tsp each ground cumin and coriander
  • 2 handfuls fresh breadcrumbs
  • 3 handfuls oats
  • 1 handful nutritional yeast flakes

Preparation

  1. Whizz all ingredients together in a food processor.

  2. Ideally leave the mixture to sit for 15 minutes.

  3. Shape into balls, burgers, or sausages.

  4. Shallow fry until cooked.

  5. Enjoy the dish as prepared.
