Wild Garlic Risotto with Roasted Garlic and Fennel

- Wild garlic (ramps)
- Risotto rice
- Garlic
- Fennel
- Capers
- Parmesan
Preparation
Preheat the oven and roast the garlic and fennel until tender.
In a large pan, sauté the wild garlic until fragrant.
Add the risotto rice and toast it lightly over medium heat.
Gradually add vegetable broth, stirring constantly until the rice is creamy and cooked.
