Vegan One-Pot Creamy Coconut Curry

Ingredients

  • Broccoli
  • Cauliflower
  • Carrots
  • Chickpeas
  • Onions
  • Coconut cream
  • Cashews
  • Salt
  • Pepper
  • Ginger
  • Turmeric
  • Curry balti
  • Garam masala
  • Cumin

Preparation

  1. Chop up the veggies.

  2. In a large deep pan, cook onions in a splash of water with ginger and turmeric.

  3. Add the veggies and all the other spices, and stir well.

  4. Add just enough water so the veggies are not completely covered, and simmer for about 8 minutes or until just a little water remains.

  5. Add drained chickpeas and coconut cream, add more spices again, stir and cook for 2 more minutes.

  6. Add cashews, salt, pepper and stir again.

  7. Enjoy as is or with basmati rice.

Tips

  1. Feel free to use as much or as little of each ingredient as you want.
