Minestrone Soup with Sausage
Ingredients
- 1/2 small Onion chopped
- 3 cloves of Garlic minced
- 2 Ribs of Celery
- 1 Carrot diced
- 1 med Sweet Potato cubed
- 1 med Golden Potato cubed
- 1 cup of frozen Broccoli
- 1/2 cup Frozen Roasted Corn
- 1 can of kidney Beans
- 1 can of Green Beans
- 1 large can of Tomatoes
- 1 package or 4 links of @beyondmeat Vegan Sausage chopped
- 2/3 cups Cavatelli Pasta (You can use any short pasta)
- 1 tsp of Dried Dill
- 1 tsp of Dried Thyme
- 1 tsp of Dried Oregano
- 2 Bay Leaves
- 6 cups of Water
- Salt & Pepper to taste
Preparation
Sauté the onion and celery until the onions start to become translucent.
Add in the herbs, carrot, potatoes, and garlic and continue to sauté for about 5-8 minutes.
Add in the green beans, kidney beans, tomatoes, frozen vegetables, and half the water. Cover and bring to a medium boil for 15-20 minutes.
In a separate pan, sauté the cut-up sausage and set aside.
To the soup, add in the remaining water and bring it back to a boil before adding in the pasta. Let the soup cook for about 8-10 minutes before adding in the cooked sausage.
Lastly, turn down the heat to medium-low and let the soup simmer for 10 minutes before serving.
Notes
This recipe is perfect for holidays with minimal effort and is very satisfying.
