Creamy Veggie Udon Noodles
Ingredients
Sauce
- 1 roasted bell pepper
- 2 cups chopped tomatoes
- 1 garlic clove
- 1/2 tsp onion powder
- fresh ginger (optional)
- 2 tbsp tamari sauce
- 1 tbsp red miso paste
- pepper to taste
- 1/2 cup plant-based milk
Vegetables and noodles
- yellow bell peppers
- onions
- broccoli
- mushrooms
- carrots
- 600g cooked udon noodles
Preparation
Blend the sauce ingredients to create the creamy sauce.
Sauté the vegetables until slightly softened.
Mix the sautéed vegetables, cooked udon noodles, and prepared sauce together.
Simmer the mixture for 15 minutes.
For spiciness, add Chile de árbol as desired.
