Spicy Gochujang Ramen with Gyoza and Kimchi

Ingredients

Broth

  • 1 tbsp neutral oil
  • 1 tbsp chilli crisp
  • 1 bunch spring onions
  • 3 garlic cloves
  • 1 inch fresh ginger
  • 3 tbsp gochujang paste
  • 3 tbsp tomato paste
  • 800ml vegetable stock
  • 1 tbsp soy sauce
  • 1 tsp sugar

Noodles and extras

  • 2 packets ramen noodles
  • 2 pak choy (or 3 baby pak choy)
  • crispy plant-based gyoza
  • kimchi
  • spring onions
  • sesame seeds

Preparation

  1. Sauté spring onions, garlic and ginger in oil with chilli crisp.

  2. Stir in gochujang, let it sizzle, then pour in stock, soy sauce and sugar, and simmer.

  3. Cook gyoza as per packet instructions. Cook noodles, adding pak choy for the last 1-2 minutes.

  4. Divide noodles into bowls, ladle over the spicy broth and top with pak choy, gyoza, kimchi, spring onions and sesame seeds.
