Baked Zucchini with Herbs and Tomatoes
Ingredients
- Zucchini
- 1 onion
- 2-3 garlic cloves
- Olive oil
- Salt
- Black pepper
- 1 tomato
- Tomato sauce
- Parsley
- Dill
- Dried mint
Preparation
Chop the onion and spread it in a baking dish.
Add chopped tomato and a bit of canned tomato on top.
Chop parsley and dill and add them.
Shave the zucchini using the serrated side of a peeler.
Make small cuts in the zucchini or spread garlic slices randomly.
Sprinkle with black pepper, dried mint, salt, and olive oil.
Bake at 200°C until the top browns.
Notes
Preparation takes about 5 minutes and the dish is very easy to make.
This is a light, healthy recipe that even those who don't like zucchini may enjoy.
