Baked Zucchini with Herbs and Tomatoes

Ingredients

  • Zucchini
  • 1 onion
  • 2-3 garlic cloves
  • Olive oil
  • Salt
  • Black pepper
  • 1 tomato
  • Tomato sauce
  • Parsley
  • Dill
  • Dried mint

Preparation

  1. Chop the onion and spread it in a baking dish.

  2. Add chopped tomato and a bit of canned tomato on top.

  3. Chop parsley and dill and add them.

  4. Shave the zucchini using the serrated side of a peeler.

  5. Make small cuts in the zucchini or spread garlic slices randomly.

  6. Sprinkle with black pepper, dried mint, salt, and olive oil.

  7. Bake at 200°C until the top browns.

Notes

  1. Preparation takes about 5 minutes and the dish is very easy to make.

  2. This is a light, healthy recipe that even those who don't like zucchini may enjoy.
