Dry Red Curry
Ingredients
- 75g green beans
- stock or water on hand
- 5 tbs oil
- 1 tsp palm sugar
- 1 tbs light soy sauce
- 1/2 tsp cornstarch
- paste—
- 10 dried chillies, deseed & soaked
- pinch of salt
- 1.5 tbs chopped galangal
- 3 tbs chopped lemongrass
- 2 tbs chopped garlic
- 1 tbs chopped shallot
- 2 tsp finely chopped lime zest
- 2 tbs chopped coriander stem
Preparation
Make paste by pounding ingredients in a mortar and pestle or blitzing in a blender
Mix celeriac with 1 tbs of oil and corn or potato starch
Sear celeriac on a pan for couple mins each side, set aside
Heat wok, add 5 tbs oil then add 3 tbs of curry paste
Fry for 8 minutes stirring constantly to avoid burning, occasionally splash with water or stock to stop from drying out
After 8 mins season with soy and sugar
Add green beans and stir for 2 more mins
Add celeriac and mix to coat well
Serve with rice
