Easy Vegan Chickpea Noodle Soup
Ingredients
- onion
- garlic
- carrot
- celery
- broth
- chickpeas
- thyme
- pepper

Preparation
Sautee onion and garlic in a pot over medium heat.
Add chopped carrot, celery, broth, and chickpeas.
Season with thyme and freshly cracked pepper as needed.
Bring to a boil then simmer for 20 minutes.
