Lemon Lentil and Kale Soup

Ingredients

  • 1 cup red lentils
  • 4 cups broth
  • 3/4 cup onion diced
  • 1/2 cup carrot diced
  • 1/2 cup celery diced
  • 1 jalapeño diced {optional}
  • 2 garlic cloves minced
  • 1/2 tsp ginger & 1/2 tsp turmeric {unless using flavoured broth then omit}
  • 1 lemon
  • 2 cups diced kale

Preparation

  1. Sauté the onion, carrot, and celery in olive oil with a sprinkle of salt for 5 minutes.

  2. Add the garlic and spices and cook for another minute.

  3. Add the lentils and broth.

  4. Simmer for 15 minutes.

  5. Blend using an immersion blender.

  6. Stir in the chopped kale and a big squeeze of lemon juice, and cook for a few more minutes.

  7. Remove from heat and serve. Optionally, sprinkle with chili flakes.

Tips

  1. This recipe serves 2-3 people.
