Lemon Lentil and Kale Soup
Ingredients
- 1 cup red lentils
- 4 cups broth
- 3/4 cup onion diced
- 1/2 cup carrot diced
- 1/2 cup celery diced
- 1 jalapeño diced {optional}
- 2 garlic cloves minced
- 1/2 tsp ginger & 1/2 tsp turmeric {unless using flavoured broth then omit}
- 1 lemon
- 2 cups diced kale
Preparation
Sauté the onion, carrot, and celery in olive oil with a sprinkle of salt for 5 minutes.
Add the garlic and spices and cook for another minute.
Add the lentils and broth.
Simmer for 15 minutes.
Blend using an immersion blender.
Stir in the chopped kale and a big squeeze of lemon juice, and cook for a few more minutes.
Remove from heat and serve. Optionally, sprinkle with chili flakes.
Tips
This recipe serves 2-3 people.
