Hearty Lentil Vegetable Soup
Ingredients
- 1 cup green lentils
- 1/3 cup red lentils
- 1 small chopped onion
- 3 minced garlic cloves
- 3 medium carrots
- 3 celery stalks
- 1 cubed golden potato
- 1 teaspoon vegetable base dissolved in 2 cups water (or vegetable broth)
- 2 teaspoons thyme
- 1/2 cup chopped fresh parsley
- 4 cups water
- Salt and pepper to taste
Preparation
Sauté the onion, celery, and carrot until the onions become translucent
Add in the potato, garlic, thyme, salt, pepper, and lentils. Continue cooking for a few minutes, making sure to mix well
Add in the broth and water, cover the pot, and let simmer on medium-low heat for 30 minutes or until the lentils are completely tender
Check for seasoning and add in the chopped parsley. Mix well and serve
Notes
Lentil soup is one of my favorites and a great source of plant protein
It makes awesome leftovers and can be poured over rice, pasta, or even a baked potato to create a new dish
