Easy Vegan Red Lentil Curry
Ingredients
- 1 lb split red lentils
- Water (to cover lentils by 3 inches)
- 1 tsp oil
- 4 cloves garlic, chopped
- 1 onion, chopped
- 3-inch piece ginger, chopped
- 4 tomatoes, chopped
- Salt and pepper (to taste)
- 3 Tbsp curry powder
- Pinch of crushed red pepper (optional)
- Pinch of cayenne (optional)
- 3 Tbsp tomato paste
- Cilantro (for garnish)
- Black pepper (for garnish)
Preparation
In a large pot, add 1 lb of cleaned split red lentils with water to cover plus an extra 3 inches, bring to a boil, and then simmer for 25 minutes.
In a separate skillet, heat 1 teaspoon of oil and sauté 4 cloves of chopped garlic, 1 chopped onion, and a 3-inch piece of chopped ginger until golden and fragrant.
Add 4 chopped fresh tomatoes, a sprinkle of salt and pepper, and cook for 3 minutes until the tomatoes release their juices.
Add 3 tablespoons of curry powder and a pinch of crushed red pepper and cayenne for heat if desired.
Check the lentils; they should be soft after 25 to 30 minutes. Add the cooked mixture from the skillet, 3 tablespoons of tomato paste, 1 teaspoon of salt, and black pepper. Bring to a boil, then simmer until the texture is smooth.
Serve hot, with optional rice, and garnish with cilantro and black pepper.
Tips
This dish can be eaten alone or with rice for a more filling meal.
