Easy Vegan Sweet Potato Curry
Ingredients
- 400ml chopped tomatoes
- 400ml coconut milk
- 3 garlic cloves
- 2 sweet potatoes
- 2 tbsp curry powder
- 2 tsp turmeric
- 1 cup corn
- 1 cup baby spinach
- 1 tsp garam masala
- 1 onion
- salt, pepper
- oil (for frying)
Preparation
Chop the onion, mince the garlic and dice the sweet potatoes.
Sauté the onion and garlic until softened.
Add the sweet potatoes, tomatoes, corn, coconut milk and spices. Let everything bubble for about 25 minutes.
Add the spinach and let it wilt. Turn off the heat and season with salt and pepper.
