Healthy Pad Thai with Tofu and Vegetables

Ingredients

  • onions
  • garlic
  • red bell pepper
  • yellow bell pepper
  • green bell pepper
  • red cabbage
  • tofu
  • rice noodles
  • sesame seeds

Spices and sauces

  • paprika
  • turmeric
  • nutmeg
  • cloves
  • garlic powder
  • 2 tablespoons peanut butter
  • cashews
  • 1 tablespoon soy sauce
  • chives
  • chili flakes (optional)

Preparation

  1. Water fry the onions, garlic, red, yellow, and green bell peppers, and red cabbage.

  2. Add the spices: paprika, turmeric, nutmeg, cloves, garlic powder, 2 tablespoons peanut butter, cashews, 1 tablespoon soy sauce, and chives.

  3. For a spicy twist, add chili flakes.

  4. Add the tofu.

  5. Then add the rice noodles.

  6. Top with sesame seeds.
