Hearty Ginger Scallion Braised Tofu

Ingredients

  • 1 pack 16oz firm tofu
  • 1 bunch scallions (about 1/3 cup)
  • 3 cloves garlic
  • 8-10 slices ginger
  • cornstarch
  • oil for pan-frying
  • your favorite cooked grain

Sauce

  • 1 tablespoon soy sauce
  • 1 tablespoon stir fry sauce
  • 3 teaspoons Chinese cooking wine/Michiu
  • 1 1/2 teaspoons organic sugar
  • 1 teaspoon toasted sesame oil
  • salt and white pepper to taste
  • 1 cup of veggie stock or water

Preparation

  1. Dry tofu cubes on paper towels, season with salt, then lightly coat with cornstarch and shallow pan-fry until golden brown or bake at 490F until crispy, flipping halfway, and set aside to absorb excess oil.

  2. Sauté ginger in 2 teaspoons oil in a non-stick pan or ceramic pot until slightly crispy, then add garlic and sauté until fragrant.

  3. Stir in the sauce and cook for 1 minute until it thickens, seasoning to taste.

  4. Add tofu and scallions, gently stir until coated with sauce, and simmer for 1 minute, adding a cornstarch slurry to thicken if needed.

  5. Serve warm with your favorite grain.
