Hearty Ginger Scallion Braised Tofu
Ingredients
- 1 pack 16oz firm tofu
- 1 bunch scallions (about 1/3 cup)
- 3 cloves garlic
- 8-10 slices ginger
- cornstarch
- oil for pan-frying
- your favorite cooked grain
Sauce
- 1 tablespoon soy sauce
- 1 tablespoon stir fry sauce
- 3 teaspoons Chinese cooking wine/Michiu
- 1 1/2 teaspoons organic sugar
- 1 teaspoon toasted sesame oil
- salt and white pepper to taste
- 1 cup of veggie stock or water
Preparation
Dry tofu cubes on paper towels, season with salt, then lightly coat with cornstarch and shallow pan-fry until golden brown or bake at 490F until crispy, flipping halfway, and set aside to absorb excess oil.
Sauté ginger in 2 teaspoons oil in a non-stick pan or ceramic pot until slightly crispy, then add garlic and sauté until fragrant.
Stir in the sauce and cook for 1 minute until it thickens, seasoning to taste.
Add tofu and scallions, gently stir until coated with sauce, and simmer for 1 minute, adding a cornstarch slurry to thicken if needed.
Serve warm with your favorite grain.
