Ginger Scallion Braised Tofu
Ingredients
- 16 oz firm tofu
- 1 bunch scallions (about 1/3 cup)
- 3 cloves garlic
- 8-10 slices ginger
- cornstarch
- oil for pan-frying
- your favorite cooked grain
Sauce
- 1 tablespoon soy sauce
- 1 tablespoon stir fry sauce
- 3 teaspoons Chinese cooking wine
- 1.5 teaspoons organic sugar
- 1 teaspoon toasted sesame oil
- salt and white pepper to taste
- 1 cup veggie stock or water
Preparation
Dry tofu cubes on paper towels and season with salt.
Lightly coat tofu cubes with cornstarch and shallow pan-fry until golden brown, or alternatively, spray with oil and bake at 490F until crispy on the outside, flipping halfway.
Place tofu on paper towels to absorb excess oil and set aside.
In a non-stick pan, sauté ginger in 2 teaspoons oil until slightly crispy.
Add garlic and sauté until fragrant.
Stir in sauce and cook for 1 minute until it thickens, then season to preference.
Add tofu and scallions, stir gently until coated with sauce.
Simmer for 1 minute.
Tips
You may add a cornstarch slurry to thicken the sauce if needed.
Serve warm with your favorite cooked grain.
