Miso Glazed Button Mushrooms

Ingredients

  • 14 oz button mushrooms
  • 1 medium onion, chopped
  • 1/3 cup tamari
  • 2 tsp miso paste
  • 2 tbsp apple cider vinegar
  • 2 tbsp maple syrup
  • 2 tbsp water
  • 2 tsp cornstarch or arrowroot powder

Preparation

  1. Boil the mushrooms in a saucepan until fully softened, which usually takes around 10 minutes; test by cooling one with a wooden spoon and checking with a toothpick.

  2. Add the onion to a non-stick frying pan and cook for 2-3 minutes until softened.

  3. Prepare the sauce by stirring together the tamari, miso paste, apple cider vinegar, maple syrup, and water.

  4. Drain and rinse the mushrooms, then add them to the frying pan and stir for a minute to reheat and brown.

  5. Pour in the sauce along with the cornstarch or arrowroot powder, and cook for 2-3 minutes over medium heat, stirring, until the glaze thickens.
